Chicken yakhni pulao

Chicken yakhni pulao recipe:-

Chicken yakhni pulao is the most favourite dish in Pakistan. I have liked yakhni pulao since my teenage years. I loved to cook yakhni pulao often times. I cooked it weekly.

People like rice any age of group. Children, Young and old people all like pulao and enjoy it. It can make events, festivals, or dinner. It is very easy to make. Hardly in  1 hour or 1.5 hours minutes you can make it. Chicken pulao can cook broth or without broth but here is the broth recipe to make pulao more tasty and spicy and juicy.

So here is the recipe of chicken yakhni pulao.

There are two step to make it.

First we need pulao's 

Ingredients.

Chicken _____ 1 kg

Salt  _________ according to taste 

Turmeric ____ 1 tea spoon

Green chilli__ 1 to 2

Fennel________2 tea spoon

Ginger ______ 1 inch piece 

Garlic_______ 1 whole 

Onion _______1 medium size

Bay leaf_____ 2 to 3 

Cloves ______ 5 to 6

Cumin_______1 tea spoon 

Coriander ___1 tea spoon 

Cinnamon stick____ 1 inch

Black pepper ______ 7 to 8

Cardamom ________ 1 to 2

Second step.

How to cook:-

Take one kettle put chicken in it. Then add ginger, garlic, onion, salt green chilli. After that all spices put together tie with some cotton stuff make potli boil it for 30 minutes. When chicken ripe broth is ready for rice. Separate the chicken from the broth and stir the broth your broth is ready for rice.

Second step.

Rice _____Half kg

Oil_______ half/ 1 cup

Onion ___ one medium 

Garlic ____half tea spoon 

Ginger ___ half tea spoon 

Bay leaf ___2 to 3

Salt________as per taste 

Red chilli _as per taste 

Turmeric _1 tea spoon 

How to cook?

Cut the onion take a pan pour oil in it mix onions and fry the onion till light brown add ginger garlic paste cook 1 to 2 min then add chicken in it saute the chicken for 4 to 5 minutes add turmeric,red chilli, salt, bay leaf add little water cook 3 to 4 minutes. When gravy is ready add water and cook until it boil . When water boil add rice and cover pan with lid cook when water dry turn off the stove.

Third step is steam:-

When water dry cover pan with lid at least 10 to 15 minutes. Your rice is ready for eat. 

Garnish:-

Mint.

Take out rice plate and garnish with mint.

Some important note.

Yougurt.

Some people don't like the taste of tomato if you don't like the taste of tomato add yogurt instead of tomato.

Rice. 

Rice should be a good quality. Try to cook basmati rice. Don't over cook rice. Don't soak rice for a more time just soak 10 to 15 minutes.

Water.

Adding water is the main key while cooking pulao don't add water more if the rice is one glass water should 2 glass or 1.5 glass.

When cooking the rice don't add a spoon many times it can break the rice.

You can change chicken from mutton,beaf and lamb as your choice. But the method has been will same.

How to cook without broth chicken pulao.

Chicken ____ 1 kg

Rice      ____ half kg

Onion ______ medium size 

Garlic _______ 1 tea spoon 

Ginger _______ 1 tea spoon 

Tomato _______ 1 or 2

Salt___________ as per taste 

Black pepper ______ 6 to 7

Red chilli __________ according to taste 

Green chilli_________ 2 to 3 

Cumin____________ 1 tea spoon 

Turmeric __________ 1 tea spoon 

Bay leaf ___________ 3 to 4

Cinnamon sticks______  1 to 2 inch

Coriander ___________ 1 tea spoon 

Cloves ______________ 1 to 2

Cardamom___________ 1 to 2 

Oil __________ half cup 

Water_______ double from rice

Take a pan pour oil in it add onion fry till medium brown add ginger garlic paste add salt and then add chicken saute the chicken until chicken change the color add turmeric red chilli add some water cook until chicken cooked very well then add all spices you can add whole or blend this is your choice then add water when water boil add rice Cooked when the water is dry and then steam for few minutes. Your chicken pulao is ready take out rice any plate garnish it with mint and enjoy.
